Gluten Free, Nut Free, Thai Chicken Pizza

Ingredients

1 (9 to 10-inch) gluten free pizza crust

1/2 cup SunButter, any smooth variety

3 tablespoons water

2 tablespoons gluten free soy sauce

2 tablespoons honey

Juice of 1 lime

2 teaspoons finely grated fresh ginger

2 cloves garlic, minced or finely grated

1 teaspoon red pepper flakes (more of less depending on the heat level you like)

1 tablespoon olive oil

8 ounces boneless skinless chicken breast, cut into 1/2-inch cubes

1 cup grated mozzarella cheese

1 red pepper, seeded and thinly sliced

4 green onions, thinly sliced

1/2 cup fresh cilantro leaves

Heat oven to 450°F. Bake the pizza crust for 10 minutes.

 

In a saucepan, combine the SunButter, water, soy sauce, honey, lime juice, ginger, garlic, and red pepper flakes. Cook over medium heat, stirring until everything is melted together.

 

Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 5 minutes. Add half the SunButter sauce and cook for another minute, making sure the sauce fully coats the chicken.

 

Spread the rest of the sauce over the dough. Top with 3/4 cup cheese, the chicken, red pepper slices, and green onion. Sprinkle the remaining 1/4 cup cheese over the top and bake for 20 minutes or until the cheese has melted and the crust is done.

 

Top with fresh cilantro leaves and serve.
