Ingredients

Granola
3 cups rolled oats
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons coconut sugar
1/4 cup sunflower seeds
2 tablespoons chia seeds
1/4 cup pure maple syrup
1/3 cup SunButter, any variety
Baked Apples
2 apples, your favorite variety
1 tablespoon ghee or coconut oil
1 teaspoon cinnamon, or more to taste
Toppings
Vanilla yogurt
Honey
Additional cinnamon
Additional SunButter
Directions

Granola
Heat oven to 325°F.
In a large bowl, mix oats, cinnamon, nutmeg, coconut sugar, sunflower seeds and chia seeds. Set aside.
In small saucepan or skillet, warm syrup and SunButter over medium heat, stirring constantly until smooth. Pour over oat mixture and stir to combine. Spread in even layer on baking sheet. Bake for 20 to 22 minutes. Remove from oven and let cool. Break into pieces and store in air tight container.
Baked Apples
Heat oven to 400°F.
Wash, peel (if desired), and slice apples. Thinner slices will cook faster than thicker ones. Place in medium-size bowl. Set aside.
Melt ghee or coconut oil in microwave for 5 to 10 seconds. Pour over apple slices and toss to coat. Place apples in shallow baking dish or individual ramekins. Sprinkle evenly with cinnamon to taste.
Bake apples for 10 to 15 minutes or until soft.
Topping
Top baked apples with a scoop of yogurt, a drizzle of honey, a sprinkle of cinnamon and a drizzle of warmed SunButter. Top with a handful of SunButter Granola. Enjoy!
