1-1/2 cups SunButter® (we used Natural)
1/2 cup butter, softened
1 teaspoon vanilla
4 cups sifted powdered sugar
6 ounces semi-sweet chocolate chips
2 tablespoons shortening
Line baking sheet with waxed or parchment paper, set aside.
In medium bowl, mix SunButter, butter, vanilla and sugar with hands to form a smooth stiff dough.
Shape into balls using 2 teaspoons of dough for each ball.
Place on prepared baking sheet and refrigerate.
In microwave safe dish, place shortening and chocolate and microwave on Medium in 30 second increments, stirring and microwaving until chocolate is smooth.
Remove balls from refrigerator. Insert a wooden toothpick into a ball and dip ball into melted chocolate. Return to baking sheet, chocolate side down, and remove toothpick. Repeat with remaining balls.
Refrigerate 30 minutes to set.
