Single Serve St. Patrick’s Chocolate Chip Cookie

Ingredients

  • ¼ cup No Sugar Added SunButter
  • ½ tsp vanilla extract
  • 1 Tbsp milk of choice
  • 1-2 Tbsp maple syrup
  • ½ tsp arrowroot flour
  • 3 Tbsp cassava flour
  • Pinch of salt
  • 1-2 Tbsp chocolate chips

Directions

  1. Mix wet ingredients.
  2. Add in dry ingredients and mix.
  3. Fold in chocolate chips.
  4. Refrigerate dough for at least 30 minutes or overnight.
  5. Form into cookie.
  6. Top with a few extra chocolate chips.
  7. Add to a lined baking sheet and bake at 350F for 10-12 minutes.
  8. Let rest for 10-15 minutes then enjoy!
