SB&J Swirl Energy Balls

Ingredients

SUNBUTTER DOUGH

1 cup sunflower seeds

10 medjool dates, pitted

1/4 cup SunButter Creamy

2 tablespoons honey

 

JELLY DOUGH

1/2 cup sunflower seeds

10 medjool dates, pitted

1/2 cup dried blueberries

pinch of salt

SUNBUTTER DOUGH

 

Place sunflower seeds in food processor and process on high for about a minute. Add dates, SunButter, and honey and process for 1 to 2 minutes more until dough is formed.

 

Scoop out a heaping teaspoon of dough and roll into a ball, repeat until all dough is used. Set aside.

 

JELLY DOUGH

 

Place sunflower seeds in food processor and process on high for about a minute. Add dates, dried blueberries and salt and process for 1 to 2 minutes more until dough is formed.

 

Scoop out a heaping teaspoon of dough and roll into a ball, repeat until all dough is used. Set aside.

 

SWIRL ENERGY BALLS

 

Press a SunButter ball and a jelly ball together and roll into a ball to create a swirled ball. Repeat with remaining balls.

 

Store in airtight container in refrigerator for up to a week or freeze for longer storage.
