Ingredients

- 2oz of organic brown rice pad thai noodles
- 1 organic zucchini
Satay Sauce:
- 2 green onions, chopped
- 3 Tbsp of butter or oil of choice
- 1 Tbsp crushed garlic
- 1 Tbsp fresh diced ginger
- 2 Tbsp hot sauce
- 1/4 tsp turmeric
- 1/4 tsp salt
- 1 Tbsp apple cider vinegar
- 3 Tbsp sugar of choice
- 2 Tbsp lime juice
- 1/3 cup liquid aminos
- 1/2 tsp chili flakes
- 1 Tbsp sesame oil
- 1/3 cup Organic SunButter
Directions

- Make the satay sauce first. Heat the butter or oil in a saucepan over medium heat with the onions, garlic, and ginger. Sauté until golden brown, about 4 minutes. Reduce the heat to low and add in the remaining sauce ingredients. Continue to cook, stirring constantly, for 7 minutes, or until the sauce thickens. Set aside.
- While the sauce is cooking, cook the pasta according to the box directions and peel and spiralize the zucchini.
- Drain the pasta and mix the pasta and zucchini.
- Pour the sauce over the pasta, toss until well combined. Garnish with cilantro and sesame seeds if desired.
