6 cups Rice Chex® cereal
1 cup semisweet chocolate chips
1/2 cup SunButter Creamy
1/2 cup butter, divided
1-1/2 cup powdered sugar
2 cups white chocolate chips
food coloring (red, yellow, blue, green)
In a microwave-safe bowl, combine chocolate chips, SunButter and 1/4 cup butter. Microwave for 30 seconds, stir, then microwave again for 30 seconds, stir, continue microwaving and stirring until chips are fully melted and mixture is smooth.
Place cereal in large bowl. Pour chocolate mixture over cereal, stirring to combine, then place in a gallon-sized resealable bag. Add powdered sugar, seal bag and toss to coat.
Spread mixture on a wax paper covered baking sheet. Set aside.
In a large microwave-safe bowl, combine remaining 1/4 cup butter and white chocolate chips. Microwave for 30 seconds, stir, then microwave again for 30 seconds, stir, continue microwaving and stirring until chips are fully melted and mixture is smooth.
Divide white chocolate into five bowls. Add 2 to 3 drops of each food coloring to 4 bowls, creating pink, green, yellow and blue chocolate. For the fifth bowl, combine 2 drops of red and 2 drops of blue food coloring, stirring until chocolate becomes purple.
Drizzle various colors of white chocolate on top of chocolate cereal mixture on wax paper covered baking sheet creating a rainbow effect. Top with rainbow sprinkles. Let cool in refrigerator for at least 10 minutes. Break apart and serve.
