Oreo SunButter Brownies

Ingredients

  • 1/2 cup Unsalted Butter, melted and hot
  • 1/4 cup Natural SunButter
  • 6 oz Semisweet Chocolate, finely chopped
  • 2 cups White Sugar
  • 3 Large Eggs
  • 1 ½ tsp Vanilla
  • 1 cup All Purpose Flour
  • 3/4 cup Dutch Process Cocoa Powder, sifted
  • 1/2 tsp Salt

  1. Preheat the oven to 350°F. Prepare a 9×9 square pan with cooking spray and 2 pieces of parchment, lining all sides of the pan.
  2. Put the chopped chocolate and SunButter in a heatproof bowl, then pour over the hot butter. Whisk until smooth.
  3. In a large mixing bowl, combine the white sugar and eggs. Whisk vigorously by hand or using an electric mixer for 3-5 minutes, or until pale and volumized. Next, pour in the melted chocolate mixture and vanilla, whisk until combined.
  4. In a separate bowl, whisk together the flour, sifted cocoa powder and salt. Add these dry ingredients into the wet ingredients, then mix them into the batter with a rubber spatula, until the batter is smooth and combined. Fold in half of the crushed oreos.
  5. Pour the batter into the prepared pan and smooth it out. Sprinkle the remaining crushed oreos on top, then back for 35-45 minutes, or until the center is just slightly jiggly. Allow brownies to fully cool before slicing.
