Irish Doodle Cookies

Ingredients

1/2 cup honey
1/2 cup SunButter® Natural, No Sugar Added
4 tablespoons (1/2 stick) butter, softened
1 large egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/4 teaspoon baking powder*
1/4 teaspoon salt
green colored sugar (for rolling)

IMPORTANT: Check to ensure all individual ingredients are produced in a peanut and tree nut free facility.

*Sometimes, but not always, the natural chlorophyll contained in sunflower seeds reacts with baking powder in the recipe, causing a green color inside the cookies after they cool. This is completely harmless! Depending on the recipe you can reduce baking powder by about one third or a splash of lemon juice may help prevent any “greening”.

Directions

Heat oven to 375°F.

Line a baking sheet with parchment paper.

In medium mixing bowl, combine honey, SunButter, egg and vanilla. With hand mixer, beat 2 minutes until creamy.

Gradually add flour, baking powder and salt. Mix well. Refrigerate at least 1 hour.

Form dough into 1 to 2-inch balls and roll in colored sugar. Place on prepared baking sheet and gently flatten ball to about half of it’s original height.

Bake 9 to 10 minutes or until very lightly browned.

Remove from oven and slide parchment off of cookie sheet onto cooling rack or counter. Cool 10 minutes.

Store cookies in airtight container.

 

TIPS AND SUGGESTIONS:

Flour hands before rolling dough into balls.

Add cinnamon to colored sugar for extra flavor.

Use other colors of sugar to fit different holidays.
