1 cup SunButter, any smooth variety
1 cup sugar, plus more for rolling the cookies
1 large egg
1 teaspoon baking powder
1 teaspoon pure vanilla extract
1/4 teaspoon fresh lemon juice
24 chocolate kisses candies (make sure they are gluten free)
Heat the oven to 350°F. Line 2 baking sheets with parchment paper or silicone baking mats. Set aside.
Combine the SunButter, 1 cup sugar, egg, baking powder, vanilla, and lemon juice in a mixing bowl and stir until well blended. Roll tablespoonfuls into balls, roll in the sugar, and place on the prepared baking sheets 2 inches apart. Bake for 11 to 12 minutes.
Let cool for 2 minutes then press a chocolate kiss into the center of each cookie, pressing down slightly. Let cool for 10 more minutes. Can be eaten warm, right away, or saved for later. Store in an airtight container.
