Gluten Free Better Than Waldorf Chicken Salad

Ingredients

1/2 cup SunButter Natural Crunch

1/4 cup mayonnaise

1 tablespoon honey

2 teaspoons fresh lemon juice

2 cups cooked chicken, chopped

2 green apples, skin on, cored and diced

1 cup red seedless grapes, cut in half

1 stalk celery, sliced

Kosher or fine sea salt, to taste

Freshly ground black pepper, to taste

Butter lettuce cups

Directions

In a small bowl, mix together the SunButter, mayonnaise, honey, and lemon juice.

 

In a medium mixing bowl, combine the chicken, apples, grapes, and celery. Add the dressing and toss to coat. Season to taste with salt and pepper.

 

Serve in lettuce cups.
