Chicken Burger with SunButter Mayo

Servings: 4 Burgers

Ingredients

BURGER

1 pound ground chicken breast

1/2 teaspoon garlic powder

1/2 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon minced ginger

1/2 small red onion, minced

1/4 cup finely chopped cilantro

1 tablespoon fish sauce

1 tablespoon sesame oil

2 cups thinly sliced cabbage

4 whole wheat buns

 

SUNBUTTER MAYO

1/4 cup mayonnaise

1 tablespoon SunButter, any smooth variety

1 tablespoon honey

1/2 teaspoon black pepper

Directions

In large bowl combine ground chicken, all spices and seasonings, fish sauce and sesame oil. Mix well and gently form into 4 patties.

 

Spray skillet or grill pan with cooking spray and heat over medium high heat. Place patties in heated pan and cook until golden brown on bottom, about 6 to 8 minutes, then flip over and cook an additional 6 to 8 minutes or until internal temperature reaches 165˚F when measured with meat thermometer.

 

While burgers are cooking prepare SunButter mayo. In a small bowl, add mayonnaise, SunButter, honey and pepper, blend well; set aside.

 

Place 1/4 cabbage on each bun bottom, top with chicken burger and a generous dollop of SunButter mayo.

 

SERVING SUGGESTION:
Make some extra SunButter Mayo and stir into shredded cabbage for even more SunButter flavor.
