Peanut Free (Kid-Friendly!) Chicken Pad Thai
Pad Thai has always been one of my favorite dishes when eating out. But since having a little one with a severe peanut allergy, we never go to Thai or Chinese restaurants anymore because of their heavy use of nuts in the dishes! So, over time, I’ve re-created some of my restaurant favorites at home! This chicken pad thai is free of peanuts and tree nuts, and is a real kid pleaser. It has very mild spice to please all palates but of course you could bump up the heat to your liking! Enjoy!
Ingredients:
1 clove garlic, finely chopped
1 tsp ginger, finely chopped
1 red pepper, diced
1 cup chopped broccoli
4 Tbsp high heat cooking oil (such as grapeseed or canola)
1 lb. whole wheat spaghetti
1 lb. boneless chicken tenders, diced into bite size pieces
2 Tbsp soy sauce
2 Tbsp water
2 Tbsp SunButter Organic (or whatever your favorite variety is!)
2 tsp asian chili paste (I use Thai Kitchen Red Curry Paste)
1 Tbsp light brown sugar
Fresh chopped cilantro for garnish
Raw sunflower seeds for garnish
Directions:
In a small mixing bowl, whisk together soy sauce, water, SunButter, and asian chili paste. Set aside.
Boil water and cook spaghetti according to package directions. Meanwhile, in a large sauté pan, heat your cooking oil over medium heat and stir in the garlic and ginger for one minute. Toss in the diced chicken and broccoli and peppers.
Stir to combine and cook until the chicken cooks thoroughly. Drain the spaghetti and immediately toss into the chicken/vegetable mixture. Mix to combine all ingredients and add in the soy/SunButter/chili paste sauce. Add in the brown sugar and mix to combine all ingredients. Serve immediately and top with sunflower seeds and cilantro for garnish.
