No Bake SunButter Chocolate Cookies
I am ALL about simple, no bake recipes! Since having my third child this year my time is precious and time in the kitchen is limited!! So over the years of being an allergy mom and needing to prepare a lot of our own sweets and goodies at home, I’ve come up with and adapted a lot of great recipes which have become family favorites! These can easily be decorated for any holiday or occasion (candy corn in this case for Halloween!) Perfect and simple for the busy mom!
(This also happens to be dairy-free to accommodate our household allergies. You can always substitute regular butter and milk!)
Yields 26-30 cookies
Ingredients:
1/2 cup Earth Balance non-dairy ‘butter’ (1 stick)
2 cups sugar
1/2 cup coconut milk
4 tablespoons cocoa powder
1 cup SunButter Organic
3 cups instant oats
2 teaspoons pure vanilla extract
Directions:
1. Line two cookie sheets with parchment or wax paper.
2. Measure out your SunButter and oats and set aside. This recipe preparation goes fast so you have to have your ingredients ready to work quickly!
3. In a medium saucepan over medium heat, add Earth Balance, sugar, coconut milk and cocoa powder.
4. Bring the mixture in the saucepan to a rolling boil while stirring with a wooden spoon. Once it is at a full boil – boil for 1 minute and 15 seconds ONLY. Yes, precision matters to get the right consistency!
5. Remove from the heat immediately.
6. Add in the SunButter and mix to combine. Then, add in the oats and the vanilla extract and mix to combine.
7. Drop by tablespoons onto baking sheets and with your fingers, shape into circles.
8. While they are still hot and wet, decorate with candy corn (or decoration of your choice).
9. Let cool for 30 minutes or until set.
10. Store in an air-tight container.
