Flourless SunButter & Chocolate Blender Muffins

My name is Megan and I need to find a muffin-aholics-annonymous. Seriously, a decent portion of my blog is dedicated to muffin recipes. They are one of my ideal breakfasts because they’re portable, and are basically frosting-less cupcakes. Plus, there’s so much variety you can have! Like a blender muffin!! Who says you can only make smoothies with your blender for breakfast?

I really adore this recipe because it requires no flour. No specialty blend, or any kind of gluten-free ratio of this flour to that flour. Just skip the flour altogether. The SunButter and banana create a hearty enough base that you’re fine without it! Naturally sweetened with a banana and honey, these are also refined sugar-free. Add to the fact that there are few ingredients (just seven!) and…did I mention they take less than 10 minutes to bake? These muffins will take less time than it takes to shower in the morning, and be oh-so-tasty!

Studded with dairy-free chocolate chips, the combination of SunButter and chocolate is seriously hard to resist. That’s why it’s great this recipe makes only 6. This is my no-fail way to make sure I don’t eat an entire dozen (that and I kinda have to share with my kids #momprobs).

The texture is soft and melts in your mouth. They’re gooey and are almost like a thick cookie. Just note that they will fall a bit after they come out of the oven due to no flour, but I’ve tried it even with regular peanut butter and a regular egg and they did it then too–that’s just part of this glorious muffin. No need to worry. Because, if you’re like me, you’ll eat them so fast you probably won’t even notice. One word of caution: be sure to add the chocolate chips AFTER you’ve blended it. I’ve made these several times, and one time I forgot and added them before blending it. It’s still tasty, but you won’t have the morsels of chocolate because it will pulverize them and make the batter be pretty much chocolate.

Flourless SunButter & Chocolate Blender Muffins (GF, DF, Top 8 Free, Vegan)

Recipe Type: Breakfast

Cook time: 10 mins
Total time: 20 mins
Serves: 4-6 muffins

Ingredients:
1 medium ripe banana, peeled
1 and 1/2 teaspoons of Ener-G Egg Replacer
2 Tablespoons rice milk
1/2 cup SunButter Creamy
3 Tablespoons honey
1 Tablespoon vanilla extract
1/4 teaspoon baking soda
1/2 cup (heaping) dairy-free chocolate chips

Instructions:
1. Preheat your oven to 400 degrees F. Spray a muffin pan with non-stick spray. You’ll only need a 6 tin muffin pan.
2. In a high powdered blender, put the banana, Ener-G, rice milk, SunButter, honey, vanilla and baking soda. Blend until everything is incorporated and smooth.

3. Stir in your chocolate chips by hand and pour the batter into the greased muffin tin. Be sure to only fill 1/2-3/4 the way full.
4. Bake for 8-10 minutes, until the edges are golden brown.
5. Allow the muffins to cool in the muffin pan for 5-10 minutes, until they are cool enough to handle. Enjoy right away.
