Satay Noodles with SunButter Sauce

Ingredients

  • 2oz of organic brown rice pad thai noodles
  • 1 organic zucchini

Satay Sauce:

  • 2 green onions, chopped
  • 3 Tbsp of butter or oil of choice
  • 1 Tbsp crushed garlic
  • 1 Tbsp fresh diced ginger
  • 2 Tbsp hot sauce
  • 1/4 tsp turmeric
  • 1/4 tsp salt
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp sugar of choice
  • 2 Tbsp lime juice
  • 1/3 cup liquid aminos
  • 1/2 tsp chili flakes
  • 1 Tbsp sesame oil
  • 1/3 cup Organic SunButter

Directions

  • Make the satay sauce first. Heat the butter or oil in a saucepan over medium heat with the onions, garlic, and ginger. Sauté until golden brown, about 4 minutes. Reduce the heat to low and add in the remaining sauce ingredients. Continue to cook, stirring constantly, for 7 minutes, or until the sauce thickens. Set aside.
  • While the sauce is cooking, cook the pasta according to the box directions and peel and spiralize the zucchini.
  • Drain the pasta and mix the pasta and zucchini.
  • Pour the sauce over the pasta, toss until well combined. Garnish with cilantro and sesame seeds if desired.
