Oreo SunButter Brownies

Ingredients

  • 1/2 cup Unsalted Butter, melted and hot
  • 1/4 cup Natural SunButter
  • 6 oz Semisweet Chocolate, finely chopped
  • 2 cups White Sugar
  • 3 Large Eggs
  • 1 ½ tsp Vanilla
  • 1 cup All Purpose Flour
  • 3/4 cup Dutch Process Cocoa Powder, sifted
  • 1/2 tsp Salt

Directions

  • Preheat the oven to 350°F. Prepare a 9×9 square pan with cooking spray and 2 pieces of parchment, lining all sides of the pan.
  • Put the chopped chocolate and SunButter in a heatproof bowl, then pour over the hot butter. Whisk until smooth.
  • In a large mixing bowl, combine the white sugar and eggs. Whisk vigorously by hand or using an electric mixer for 3-5 minutes, or until pale and volumized. Next, pour in the melted chocolate mixture and vanilla, whisk until combined.
  • In a separate bowl, whisk together the flour, sifted cocoa powder and salt. Add these dry ingredients into the wet ingredients, then mix them into the batter with a rubber spatula, until the batter is smooth and combined. Fold in half of the crushed oreos.
  • Pour the batter into the prepared pan and smooth it out. Sprinkle the remaining crushed oreos on top, then back for 35-45 minutes, or until the center is just slightly jiggly. Allow brownies to fully cool before slicing.
