Nut Free Truffles

Ingredients
FILLING
- 1 cup SunButter, any variety
- 2 tablespoons coconut flour (or another flour if you can’t have coconut)
- 2 tablespoons maple syrup
- 1/4 cup Enjoy Life chocolate chips
- 1/4 tsp sea salt
CHOCOLATE COATING
- 1 cup Enjoy Life chocolate chips
- 1/4 cup flax milk
Directions
- In a food processor, combine SunButter, maple syrup, coconut flour and sea salt. Blend together for a minute, then add in the chocolate chips and pulse a few more times to mix them in well.
- Form SunButter mixture into ball-shaped truffles and place on a parchment or wax paper lined baking sheet. Place truffles in freezer for an hour or until firm enough to handle.
- In double boiler or medium microwave safe dish, melt chocolate and flax milk until smooth and blended together.
- Using two forks, roll the truffles in the melted chocolate and coat each one completely. Place coated truffles back on baking sheet. Return to freezer for another hour.
- After chocolate coating become firm, store in air tight container in refrigerator.
