SunButter Shamrock Shake
I love St. Patrick’s Day. Maybe because I’m Irish, but also because it’s the one day of the year our kiddos eat and enjoy all their green foods.
I try to take full advantage of this by making naturally-green fun lunches for my daughter and other treats.
There are simple ways you can incorporate some fun holiday themes into your everyday foods:
Using a clover or heart shaped cookie cutter, you can create a shamrock right into their SunButter sandwiches or cut out of their breakfast pancakes.
For lunches, complete the sides with green veggies like broccoli or snap peas and green fruits like grapes and kiwi.
We also love drinking smoothies in our house. Those iconic green minty shakes are so popular this time of year and I love making healthier versions of my own that are allergy-friendly at home! A great way to sneak in some veggies and protein.
Ingredients
1 C Spinach
1 Frozen Banana, peeled & sliced prior to freezing
¼ C of Dairy-Free Milk
¼ C of Dairy-Free Vanilla Yogurt
1 TB of SunButter
½ t Peppermint Extract
Optional: Dairy-Free Whipped Topping
Directions
1. Place all ingredients into your blender. Blend until completely smooth.
2. Pour into glass and top with dairy-free whipped topping (optional). Serves 1-2.
