SunButter Oatmeal Raisin No-Bake Bites

Energy bites are pretty much the perfect snack for anyone on-the-go. Kids absolutely love them because they taste so good, and I love them because when made right, they are a healthy snack, loaded with protein, healthy carbs & fats. Unfortunately, most recipes for bites (or bars) are filled with peanut butter as their protein source and as a Food Allergy Mom, that just won’t do.

These little bites use Organic SunButter to keep them peanut free, which is an absolute must! They are also sweetened with agave and given a little bit of chewiness with the addition of gluten-free oats. Basically, it’s the best, Top 8 free & vegan convenience snack around. Oh, and I forgot to mention, you don’t even have to bake these little jems! How awesome is that?

This recipe is also incredibly versatile:
Don’t have flax meal? Use ground chia seeds.
Don’t like raisins? Try cranberries.
Love chocolate? Use “safe” chocolate chips or even cacao nibs instead of raisins.
The possibilities are endless!

SunButter Oatmeal Raisin No Bake Bites - Nicole Dawson

Ingredients:
1/2 cup Organic SunButter
1/4 cup Agave
1 tsp. Vanilla extract
1/4 cup GF Oat flour
3 TGF Quick oats
2 T Ground flax meal
Pinch Cinnamon
Pinch Sea Salt
1/4 cup Organic raisins

Directions:
1. In a large bowl, mix together SunButter, agave, and vanilla into a creamy blend.
2. In a small bowl, combine oat flour, oats, flax meal, cinnamon, and salt.
3. Add oat mix into SunButter blend and combine. I liked to use my clean hands and lightly knead, making sure it’s all incorporated. Fold in the raisins, making sure each bite will get a little piece of sweetness.
4. Using a mini ice cream scoop or tablespoon, scoop equal bite-sized portions and roll into balls.
5. Refrigerate until ready to serve.
