SunButter Chocolate Chip Frozen Sandwiches

Summer is a time for frozen treats and messy smiles. We have a neighborhood ice cream truck that drives up our street with the classic music playing. It reminds me of my childhood and running with a few quarters from my Grandpa to get a treat. Unfortunately, my girls have learned they can not eat anything from our community ice cream truck. Nothing is peanut free and gluten free safe. They see the other children run to the truck and wait for the sundae-cones and sandwiches. My oldest dreams of a safe ice cream truck and says it isn’t fair. What’s a mom to do?

The one thing any mom would do. Give them the world! I have dreamed up the perfect frozen summer treat including a chocolate chip cookie and filled it with the most amazing SunButter flavored ice cream. I grew up loving peanut butter ice cream covered in chocolate syrup. This inspired the SunButter frozen filling for this special treat.

Enjoy!

SunButter Chocolate Chip Frozen Sandwiches
1 box Aleia’s chocolate chip cookies
2 frozen bananas
1/4 cup coconut cream (thick part from canned coconut milk)
1/4 cup SunButter (any variety)
1 tsp vanilla
1 tbsp maple syrup

Directions:
1. Freeze peeled bananas overnight.
2. Break up bananas into smaller chunks and add to food processor or vitamix.
3. Blend until chopped into small flakes.
4. Add coconut cream and SunButter. Blend until combined.
5. Add vanilla and maple syrup. Blend until smooth.
6. Scoop into container with lid.
7. Freeze for at least 20 minutes.

Assembly: 
1. Use two cookies and scoop 1 tbsp of SunButter ice cream onto cookie with bottom facing up.
2. Place other cookie on top to assemble sandwich and squeeze slightly.
3. You can roll the cookie in mini chocolate chips.
4. Enjoy or place SunButter Chocolate Chip Frozen Sandwiches in airtight container and store in freezer.
