SunButter African Inspired Soup

SunButter and soup, yes you might not have seen that recipe coming. Soup isn’t the first recipe you might think of making with SunButter as an ingredient. Yes, I do love to bake with my beloved SunButter and eat it on my gluten-free toast! Sometimes, you have to think outside of the box when it comes to using your favorite products in your everyday cooking!

As the weather starts to become chilly again, our minds start to think about soul warming soup. Often times African Inspired soups are one-dish hearty meals that include the use of peanut butter as flavoring. For families with nut allergies, this is a no-no. Thankfully, great tasting, peanut-free, tree nut-free SunButter can be subbed in to these type of recipes to create a beautiful flavor profile.

These types of soups are often so thick, they are considered stews. They are often served with a dollop of rice on top to make it a complete one-dish meal.

Ingredients:
1 T olive oil
1 medium red onion, diced
8 oz of button mushrooms, sliced
6 cups of vegetable broth
1/2 cup tomato paste
1 T gluten-free soy sauce
1 cup of creamy SunButter
1 bunch of collard greens, diced
2 T fresh cilantro, chopped
Side of cooked rice, optional

Directions:
1. In deep soup pot over medium heat, add oil. Saute onions and mushrooms until soft.
2. Add in vegetable broth, tomato paste and soy sauce. Bring to a boil.
3. Remove one cup of liquid. Gently combine liquid with SunButter. Once combined, add back into the soup pot.
4. Add diced collard greens and cilantro, simmer for 15 minutes.
5. Serve with a dollop of cooked rice (optional) and ENJOY!
