Thai Veggie Quinoa Bowls

Ingredients

SALAD

1/2 cup finely chopped broccoli

1/2 cup quinoa cooked according to package directions and cooled

1/2 small red onion, diced

1/4 cup grated carrots

1 handful cilantro, chopped

1/4 cup chopped green onions

2 tablespoons roasted sunflower seeds

 

DRESSING

1/2 to 1 lime, zest and juice to taste

1 teaspoon sesame seeds

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 cloves garlic, minced

1-inch piece of ginger, minced

1 tablespoon SunButter

Directions

  1. In a large bowl, place all salad ingredients. Toss until combined.
  2. In a small bowl combine dressing ingredients and whisk until combined. Taste and add more lime juice and zest if desired.
  3. Pour dressing over salad and toss until combined.

 

SERVING SUGGESTION: Add a dash of red pepper flakes for heat
