SunButter Easter Eggs

No-bake dessert recipes make the holidays easier!  This dairy, soy, gluten and nut free recipe not only looks beautiful, can be made days in advance, but it tastes amazing, too. I used fillable plastic Easter eggs to mold the SunButter and decorated each egg with allergy-friendly icing, which results in a gorgeous dessert perfect for any Easter table.

SunButter & Chocolate Easter Eggs - Elizabeth DiBurro, EBL Food Allergies

Recipe makes 20 eggs

Ingredients
¼ cup honey
¼ cup agave nectar
3 Tbsp brown sugar
½ cup SunButter
½ cup allergy-friendly chocolate chips
1 cup allergy-friendly chocolate chips
Allergy-friendly dye-free icing

Directions
1. Combine the first four ingredients in a bowl (honey, agave nectar, brown sugar, SunButter), mixing well.
2. Spoon mixture into each plastic egg, filling halfway.
3. Microwave ½ cup of chocolate chips for 30 seconds, stir and repeat process until chocolate is completely melted and blended. Spoon a small amount of chocolate on top of the SunButter mixture and spread evenly. Place eggs in the plastic molds on a parchment lined cookie sheet and freeze until hardened or until you’re ready for the next step.
4. Microwave 1 cup of chocolate chips for 30 seconds, stir and repeat process until chocolate is completely melted.
5. Remove eggs from freezer and remove them from the plastic molds. Place one SunButter egg (chocolate side down) on the end of a fork. Holding the egg over the chocolate bowl, slowly spoon melted chocolate over the egg until it is completely covered and allow the excess chocolate to drip back into the bowl to be reused. Set the egg onto the parchment lined cookie sheet and continue the process on the rest of the eggs.
6. Decorate the eggs with allergy-friendly dye-free icing once the chocolate has hardened, approx. 10 minutes.
