Nut Free Truffles

1 cup SunButter, any variety
2 tablespoons coconut flour (or another flour if you can’t have coconut)
2 tablespoons maple syrup
1/4 cup Enjoy Life chocolate chips
1/4 tsp sea salt

1 cup Enjoy Life chocolate chips
1/4 cup flax milk



In a food processor, combine SunButter, maple syrup, coconut flour and sea salt. Blend together for a minute, then add in the chocolate chips and pulse a few more times to mix them in well.
Form SunButter mixture into ball-shaped truffles and place on a parchment or wax paper lined baking sheet. Place truffles in freezer for an hour or until firm enough to handle.
In double boiler or medium microwave safe dish, melt chocolate and flax milk until smooth and blended together.
Using two forks, roll the truffles in the melted chocolate and coat each one completely. Place coated truffles back on baking sheet. Return to freezer for another hour.
After chocolate coating become firm, store in air tight container in refrigerator.
