Apple Cider Donuts with Maple Glaze

Servings: 8 Donuts

Ingredients

WET
1/4 cup coconut oil, melted and cooled
2 tablespoons maple syrup
3 eggs at room temperature
1 teaspoon vanilla extract
1/2 cup SunButter (we used Organic)
1/4 cup applesauce
1/4 cup apple cider

DRY
4 tablespoon coconut flour
1 teaspoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon

MAPLE GLAZE
1/4 cup apple cider
3 tablespoons coconut butter
2 tablespoons coconut oil
1/4 cup maple syrup
1 1/2 teaspoon cinnamon

IMPORTANT: Check to ensure all individual ingredients are produced in a peanut and tree nut free facility.

Directions

  1. Preheat oven to 350°F and grease donut pan well.
  2. Mix together wet ingredients with mixer on medium until smooth.
  3. Mix in dry ingredients and continue to mix with mixer until smooth.
  4. Bake in oven for about 8-10 minutes (or until tooth pick turns out clean!).
  5. Let the donuts cool and while they are cooling begin making maple glaze.
  6. Mix together all the ingredients (you may want to melt coconut butter if it is hard).
  7. Once donuts are cooled (about 30 minutes), use a knife or spatula and glaze each donut.
  8. Eat within 5 days and store in fridge!
