Chocolate SunButter Holiday Cake Balls

Cake pops and cake balls have been a fun craze over the past fews years, and I’ve found that I can easily tweak any traditional recipe and add in my favorite SunButter!! Being a former chocolate and peanut butter junkie, this recipe simply hits the spot! It’s fun and easy to make, kids love them and it’s perfect for festive holiday gatherings!

Chocolate SunButter Holiday Cake Balls

Ingredients:
– 1 boxed chocolate cake mix, prepared according to package directions (I used half of a Pillsbury Purely Simple Chocolate Cake Mix)
– SunButter Organic (amount depends on how moist your cake is to start off; I used approximately 2 heaping TBSP)
– 2 packages of semi-sweet chocolate chips
– Festive holiday colored sprinkles and/or icing of your choice

Directions:
1. Prepare cake mix according to package directions. After cake is cooked and cooled, crumble half of it into a large mixing bowl.
2. Begin to add in the SunButter and mix well. The amount you add will depend on the moistness of your cake. I used two heaping TBSP. The SunButter is the “glue” that will hold the cake balls together.

3. I mixed it in with my fingers as this simply works best! It’s a messy job but it’ll be so worth it! You want the consistency to be crumbly, yet formable. You want to be able to easily mold it into balls.
4. Roll mixture into balls and place on a wax paper lined cookie sheet. Makes approximately 20 cake balls but your amount will depend on how large or small you make them. Bite sized is best!

5. Place rolled cake balls in the freezer for about 15 minutes to chill them. This is an important step so that they won’t crumble and break in the warm, melted chocolate. Don’t leave them in the freezer too long or they will be sure to freeze!
6. Melt chocolate chips while your cake balls are in the freezer. I do this over a double boiler on my stove but the chocolate can also be melted in your microwave.
7. Dip cake balls into melted chocolate. I used a toothpick to dip them in the chocolate and a small spatula to wipe off the excess chocolate dripping. Place on a wax paper lined cookie sheet.

8. Decorate cake balls with your sprinkles. Work quickly here as the chocolate dries fast. Set decorated cake balls in the fridge to set the chocolate.
