SunButter Pumpkin Protein Bites

I have been a longtime lover of SunButter. Not just because it’s delicious, but also because it’s from North Dakota. That is where my precious mom grew up so we all have a special little bond. I’ve created so many recipes with SunButter I couldn’t choose a favorite one to share. I mean this happens regularly over here.

Yes, Crunch is my favorite. So although I couldn’t decide on a favorite recipe, I could find my very first post when I made SunButter Banana French Toast. You can find that here.

With all the craziness and business of the holidays approaching I felt I needed to create a quick healthy snack that was easy to make, and that we can all have on hand in the fridge or freezer. So, that’s exactly what I came up with. Just the other day I made these little protein bite gems!

They are super easy to make and are great to keep for a couple days in the refrigerator or freezer in an airtight container. I hope you enjoy the recipe!

SunButter Pumpkin Protein Bites

Ingredients:
1/4 cup canned pumpkin
1/4 cup SunButter
1/4 cup melted coconut oil
1 tablespoon honey
1/4 teaspoon vanilla extract
1/8 tsp cinnamon
pinch of salt
2 scoops vanilla flavored protein powder (around 60 grams)

Directions:
1. Combine all ingredients except for protein powder. Make sure the coconut oil is melted in order to be able to mix well. Add in protein powder one scoop at a time and mix.
2. Place in refrigerator for 30 minutes or until firm enough to form balls. Roll into balls and place on cookie sheet and return to the refrigerator until set.
3. Leftover balls can be stored in the refrigerator or freezer in an airtight container for up to three days.
