SunButter Chickpea Burgers with Lemon Garlic Sauce

Food is such a joy to celebrate, ‘good’ food that is, and today many people are returning to the kitchen to make their own meals. For the past 30 years, I have focused my energies on inspiring and enabling people to prepare great tasting, health infused foods at home. I hope you enjoy my SunButter Chickpea Burgers / Patties with Lemon Garlic Sauce recipe!

SunButter Chickpea Burgers/Patties
– Dinner, lunch, snack
– Vegan, gluten, nut-free and soy-free
– Prep time: 10 minutes cooking time – approx 30 minutes
– Yield: 8 patties

Ingredients:
1 medium onion cut in half (approx 2/3 cup)
2-3 cloves garlic or 1 generous tsp.
1 cup parsley or cilantro if preferred, or a combo of both
2-3 tsp. ground cumin, to taste
1/2 – 1 tsp. salt to taste
1/2 tsp. black pepper, to taste
1/2 – 1 tsp. smoked paprika, to taste
1/4 – 1/2 tsp. cayenne if desired
1/4 cup lemon juice
1-2 tbsp. garbanzo flour (aka chickpeas) or oat flour or hemp seeds
1/4 cup Organic SunButter
3 tbsp. olive oil
2 cups cooked chickpeas (or 1, 19 oz can can drained and rinsed)
2 tbsp. sunflower seeds, chopped slightly

Directions:
1. Preheat oven to 200°C / 400°F. Brush a little grapeseed, sesame or olive oil onto a stoneware baking sheet or line a cookie sheet with parchment paper.
2. Add onion, garlic, parsley, and spices to food processor and process to roughly chop. Add in lemon juice, SunButter, olive oil and chickpeas, process until blended yet still a little chunky. Taste and adjust seasonings as desired then pulse or stir in chickpea flour.
3. Roll the mixture into 8 even sized balls then gently flatten into patties. Sprinkle with the sunflower seeds, gently pressing to adhere.
4. Bake approx. 30 minutes, flipping once after 20 minutes.

Meanwhile prepare your lemon garlic sauce. Recipe below.

Lemon Garlic Sunbutter Sauce
Great with the burgers/patties or use in wraps, tacos as a dip or salad dressing, etc.

– Sauce, dip, dressing
– Vegan, gluten, nut-free and soy-free
– Prep time: 5 minutes
– Yield: approx. 1 1/4 cups

Ingredients:
1/2 cup Organic SunButter
4 tbsp hot water, more if needed
2 tbsp lemon juice
2 cloves garlic, minced
1/4 cup olive oil, optional: + 1 tbsp toasted sesame oil
1/2 tsp sea salt and freshly ground pepper, to taste
1/2 – 1 tsp ground cumin, to taste
Pinch of cayenne pepper and a sprinkle of paprika

Directions:
1. In a food processor, blender or a large jar with a tight fitting lid add in all of the ingredients and whirl or shake until well combined and a thick creamy consistency forms.
2. Taste and adjust seasonings and thin with additional water or lemon juice if needed.  Stores well in a glass jar for up to 5 days.

To serve:
Once the burgers are baked, use patties in an Ezekiel sprouted grain bun, fill a pita, wrap or taco, top a salad or enjoy with your favorite sautéed or roasted veggies. Drizzle generously with the Lemon Garlic SunButter sauce, sit down and enjoy. These patties freeze well so double the recipe to have some on hand for future use!
