SunButter Hot Cocoa Cookies
SunButter and chocolate warms our hearts. How about SunButter and hot cocoa, together? These chewy cookies do taste just like a cup of hot cocoa, complete with a touch of SunButter and sweet little marshmallow bits baked right in. Of course, these yummies are also free of peanuts and tree nuts.
SunButter Hot Cocoa Cookies
Ingredients:
1 c. butter, softened
1/4 c. SunButter (we used SunButter Creamy)
1 c. granulated sugar
2/3 c. packed light brown sugar
2 eggs
1 tsp. vanilla
3 1/4 c. flour
3/4 c. hot cocoa mix
1/2 tsp. baking soda
1/2 tsp. baking powder
1 c. nut-free mini chocolate chips
1 c. mini marshmallow bits
Directions:
Preheat oven to 375 degrees F. Combine butter, SunButter and sugars until well-blended. Add eggs and vanilla, mix well. Add flour, hot cocoa mix, baking soda and baking powder and mix until blended. Stir in chocolate chips and marshmallow bits. Place by large spoon-fulls onto ungreased baking sheets, about 2 inches apart. Bake 10 -12 minutes or until just a bit browned at edges. Cool five minutes. Remove with spatula and finish cooling on wire racks.
