SunButter Fudgesicles!

Nothing’s better than a frozen treat to help cool you down during the summer! I was craving chocolate a few weeks ago on a sweltering hot day, and I wondered if I could make an allergy-friendly fudgesicle. Then, it hit me– SunButter Fudgesicles would be delicious! You know, because adding SunButter to just about anything makes it better!

I tried a few different recipes, and finally got it just the way I wanted it. My family and I have been loving these SunButter Fudgesicles in the evenings after dinner. They are a smooth blend of chocolate and a protein-packed hint of SunButter to balance the sweetness.

This recipe is easy to make and is free of the Top 8 Allergens, but remember to read all food labels thoroughly.

Ingredients:
2 cups milk (I used rice milk, but any milk is fine)*
2 teaspoons corn starch
1/4 teaspoon salt
2 tablespoon sugar
1 cup dairy-free chocolate chips (I used an allergy-friendly brand)*
1/2 cup SunButter

Directions:
1. Warm milk on medium-high heat in a medium sized saucepan.
2. Once heated, add cornstarch and use a whisk to throughly dissolve in the milk.
3. Add salt and sugar and whisk until dissolved and mixed well.
4. Add chocolate chips and stir until they are melted and completely mixed with milk.
5. Bring to a boil for 2-4 minutes, reducing heat to medium if needed to keep it from boiling over.
6. Remove from heat and stir in SunButter until it is well blended.
7. Cool for 10 minutes before pouring into popsicle mold (makes six fudgesicles).
8. Use a funnel (if needed) to pour into popsicle mold (if you have leftover mixture after filling your popsicle molds, chill the extra into small bowls for pudding).
9. Freeze for several hours or overnight before serving.

*Please read all ingredients if making these food allergy-friendly, especially dairy-free. Any milk and chocolate chips can be used if not making the fudgesicles dairy-free.
